Maiale con mandorle e cipollotti

Grazie a Nadia ho sperimentato questa ricetta, che in origine era pollo con mandorle e cipolloti ma, dato che el pulàster in casa ci piace poco, ho optato per il versatile maiale. Pare che l'origine della ricetta sia La Prova del Cuoco (la trasmissione televisiva), a questa Nadia ha fatto la sua modifica (ha aggiunto le mandorle tostate) e io la mia (il maiale). La preparazione è semplicissima e anche veloce, il risultato è davvero ottimo, soprattutto se amate la cucina cinese (a questa infatti si ispira). Grazie Nadia-chan! :)

Ingredienti:
600gr di lonza di maiale tagliata a fettine sottilissime - 100gr di mandorle pelate - 10
cipollotti se piccoli, altrimenti 6 - 2 cucchiai di olio di riso o di semi - 3-4 cucchiai di salsa di soia - sale.

Tagliate a fettine sottilissime la lonza di maiale e poi tagliatele ancora in due o tre parti. Tostate le mandorle in forno a 180°C per qualche minuto e pulite i cipolloti tagliandoli a fettine sottili. Prendete un wok, versateci l'olio e fate soffriggere i cipolloti a fuoco vivace, mescolando spesso. Aggiungete il maiale, cuocete per 3 minuti, salate poco (la salsa di soia farà il resto) e aggiungete le mandorle tostate, sempre continuando a mescolare. Per ultimo versate la salsa di soia. Fate rapprendere la salsa e servite subito. In tutto dovrete far cuocere al massimo 8-10 minuti, ma non di più, in questo modo la carne di maiale rimarrà morbida.




Pork with almonds and spring onions


I tried this recipe thanks to Nadia. At first was chicken with almonds and spring onions but, as we don't like so much chicken at home, I used pork instead. The source of this recipe is La Prova del Cuoco (a cooking tv program in Italy), then was modified by Nadia (she added toasted almonds) and also by me (with pork). Preparation is very quick and easy, with amazing results, especially if you like Chinese cooking (it is Chinese inspired indeed). Thank you Nadia-chan! :)

Serves 4

Ingredients: 600gr (22oz) pork meat cut in thin slices - 100gr (5.3oz) peeled almonds - 10 spring onions i small, otherwise take 6 - 2tbs rice oil or other vegetable oil - 3-4tbs soy sauce - salt.

Cut pork meat in very thin slices and then cut it in other two or three pieces. Toast almond in oven at 180°C (350F - gas mar 4) for few minutes, then clean spring onions and chop them. Take a wok then pour oil and fry the onions – keeping the heat medium while you move them around now and then. Add pork, cook for 3 minutes, add salt (a little, soy sauce will do the rest), toasted almonds and keep mixing. Last pour soy sauce. Give it one good stir and serve right away. You need to cook them 8-10 minutes totally, not more, to keep the pork tender.
