Ho creato ad hoc questa ricetta per tre stampini della Pavoni acquistati da poco (in realtà quattro,ma alla fine ne ho usati solo tre), erano troppo carini e non ho resistito! Questi tortini sono ottimi per accompagnare una bella tazza di thé e se, ovviamente, vi piace la cannella. Mangiati appena fatti sono leggermente croccanti fuori e morbidi dentro, mentre il giorno dopo sono morbidi... e basta!
Ingredienti: 200gr di farina - 130gr di burro - 160gr di zucchero - 100gr di mascarpone - 50gr di noci - 1 cucchiaino e mezzo di lievito - 2 cucchiaini di cannella - un pizzico di sale - 2 uova
Mescolare la farina con il lievito, il sale e la cannella.
In un'altra terrina montare a crema il burro con lo zucchero, aggiungere il mascarpone, le uova una alla volta ed infine le noci tritate. Unire al composto la miscela di farina e mescolare bene. Versare il tutto in tre stampini piccoli (la dimensione media è 150x120mm) oppure in una tortiera da 22cm di diametro e infornare a 180° (170° se usate stampi in silicone) per 20 minuti (almeno 30 se utilizzate uno stampo da 22cm).

Small cakes with nuts and cinnamon
I created this receipe for three Pavoni small moulds I just bought (well, they are four but I only used three), they were so cute I couldn't resist! These small cakes are perfect with a cup of tea and, obviously, if you like cinnamon. If you eat them right away they're lightly crunchy outside and spongy inside, while next day they're just... spongy!
Ingredients: 200gr(7oz) flour - 130gr (4.6oz) butter - 160gr(5.6oz) sugar - 100gr(3.5oz) mascarpone - 50gr(1.7) nuts - 1½ tsp baking powder - 2tsp cinnamon - 1 pinch salt - 2 eggs
Mix flour with baking powder, salt and cinnamon. Beat sugar with butter until creamy, then add mascarpone, eggs one at a time and crushed nuts. Mix together both mixtures and stir well. Pour into three small moulds (medium size is 150x120mm) or in a tin of 22cm - 8.6inches diameter and bake at 180°C -350F (170°C - 325 F if using silicone moulds) for 20 minutes (at least 30 if using 22cm - 8.6inches tin).
