If we exclude the pastiera napoletana made on Easter day, I spent a really long time without preparing a real cake, a period where I had very few desserts and mostly muffins. I've already tried once coconut and lime together, with these mini muffins and I really liked it. This recipe comes from the book "The best cakes in the world", I've modified only few things and substituted the frosting, very buttery, with a light syrup.
