Panini alla pancetta

Questi panini sono in assoluto tra i miei preferiti: croccanti fuori, morbidi dentro e molto saporiti grazie alla pancetta. Per ottenere una lievitazione migliore, normalmente aggiungo un cucchiaino di pasta acida essiccata; per dare invece un gusto e una migliore colorazione, uso la farina di grano maltata. Questi ingredienti, assieme alla farina, li acquisto su Tibiona.

Per 16 panini di media grandezza


Ingredienti: 350gr di farina di grano duro - 150gr di farina Manitoba - 300ml di acqua - 15gr di lievito di birra - 2 cucchiaini e mezzo di sale - 2 cucchiaini di zucchero - un cucchiaio e mezzo di olio di oliva - 200gr di pancetta affumicata tagliata a cubetti.

Con impastatrice o Macchina del Pane:

Mettere gli ingredienti nella MdP come da istruzioni del costruttore e selezionare il programma
impasto. Al suono del beep aggiungere la pancetta a cubetti (o dopo 10 minuti di impasto).

Senza impastatrice o Macchina del Pane:
Mescolare i due tipi di farina con il sale, aggiungere gradatamente l'acqua tiepida e poi il lievito fatto sciogliere in un poco d'acqua e zucchero. Impastare bene in modo da ottenere un impasto morbido ed elastico. Aggiungere l'olio e la pancetta ed impastare ancora. Lasciare lievitare, coperto, per due ore.

Formare 16 panini con le mani (anche più o meno, se preferite) e sistemarli su una teglia da forno
(rivestita di carta forno o da un foglio di silicone) ben distanziati tra loro. Coprire con un canovaccio e lasciare lievitare un'ora. Cuocere in forno preriscaldato a 220° per 15-20 minuti


Bacon buns

These buns are among my fovourites: crunchy outside, soft in the inside and very tasty because of the
bacon. To obtain a better raising, I normally add a teaspoon of dried sourdough; for a better taste and colouring, I use malted wheat flour. I buy these ingredients, together with flour, on Tibiona. Makes 16 buns medium size.

Ingredients:
350gr (12.3oz) hard wheat flour - 150gr (5.3oz) Manitoba flour - 300ml (10.6oz) water -
15gr (10.5oz) brewer's yeast - 2 ½ tsp salt - 2tsp sugar - 1 ½ tsp olive oil - 200gr (7oz) smoked bacon, diced.

With a kneader or a bread machine:
Put all ingredients into the kneader or the bread machine, following the constructor's instructions,
selecting kneading program, for bread machine. At the beep add diced smoked bacon (or after 10 minutes kneading).

Without a kneader or a bread machine:

Mix both type of flour with salt, add by degrees warm water and then yeast melted in a bit of water
with sugar. Knead until you'll obtain a very elastic and springy dough, add diced bacon and oil and knead other 5 minutes. Leave the dough to rise for two hours.

Next form 16 rolls with your hands (more or less, if you prefer) and place them on a baking sheet (covered with greasedproof paper or a silicone sheet). Cover them with a cloth and leave to rise for an hour. Cook at 220° (425F - gas mark 7) for 15-20 minutes.
