I have a weakness for white chocolate, maybe you've noticed from my recipes, so I had to make an ice-cream with it! With this hot weather if I think about a dessert I can only come out with an ice-cream or a mousse. This one is very creamy and maybe a bit sweet, so if you like reduce the quantity of sugar. You can decorate it with raspberries or crushed pistachios.
Ingredients: 200gr (0.9cup-7oz) white chocolate - 200ml (0.8cup - 7oz) whipped cream - 1 vanilla pod - 500gr (2.2 cup - 17.6oz) milk - 180gr (0.8cup -6.4oz) sugar - 2 or 3tbsp milk
Heat milk, add vanilla seeds and leave for 15 minutes. Whisk eggs with sugar, pour milk and heat for 5-7 minutes stirring well. Melt chocolate with 2tbs milk in a heatproof bowl over a pan of barely simmering water then add it to the milk and eggs mixture. Cool down and add whipped cream. Pour into the ice-cream maker and proceed according to the constructor's instructions (for this ice-cream you will need at least 35 minutes).
