Crostatine ai fichi

Fine agosto, inizio settembre: è la stagione dei fichi. Il nostro vicino ne ha un gran bell'albero, e metà dei suoi rami sconfinano nel nostro giardino... cosa fai, lasci che cadano a terra e si rovinino?! Non sia mai, li cogliamo e ce li mangiamo...

Per ca. 8 crostatine (diametro 7-8cm)

Ingredienti:
per la pasta frolla 125gr farina di grano tenero - 125gr farina di farro - 100gr di zucchero - 1 uovo piccolo - 100gr di burro - 1 pizzico di sale
per il ripieno 8 fichi maturi - succo di limone - zucchero di canna q.b.

Preparare la pasta frolla impastando molto velocemente tutti gli ingredienti (o usare un robot da cucina), formare una palla e lasciar riposare in frigorifero per 30 minuti. Trascorso questo tempo, prelevare 3/4 dell'impasto e formare 8 mucchietti, stenderli con il mattarello e foderarvi gli stampini già imburrarati e infarinati. Sbucciare i fichi e farli a pezzettini, mescolandoli tutti assieme; distribuire il composto negli stampini, quindi, su ognuno, versarvi qualche goccia di limone e spolverizzare con un cucchiaino di zucchero di canna. Stendere il rimanente impasto e ritagliare delle strisce con le quali formerete una griglia sulla superficie delle crostatine. Cuocere a 175° per 15-20 minuti.



Figs small tarts

End of august, beginning of september: this is figs season. Our neighbour has a big fig tree, and half of his branches are just in our garden... What would you do, let them fall down and get rotten?! This must never come to pass! We just pick and eat them...

Makes 8 tarts (diameter 7-8cm/2.5-3inch)

Ingredients:
for the shortcrust: 125gr (4.4oz) plain flour - 125gr (4.4oz) emmer flour - 100gr (3.5oz) sugar - 1 small egg - 100gr (3.5oz) butter - pinch of salt
for the filling: 8 ripe figs - lemon juice - brown sugar


Prepare the shortcrust kneading fast all ingredients (or using a food processor), make a ball and leave in the fridge for 30 minutes. After this time, take 3/4 dough, form 8 small parts and roll them out. Grease the tins, flour them and line them with the rounds. Peel the figs and cut them into pieces, mixing well. Fill the round with the figs, then pour few drops of lemon juice and dust them with one tsp of brown sugar each. Roll the remaining dough and cut few stripes that will form a grid on the surface of the tarts. Bake at 175° C (337F) for 15-20 minutes.
